What is Fennel Pollen?
The fennel plant grows wild on the sunny inland and coastal fields of California. With its umbels of tiny yellow flowers and dark green or bronze wispy leaves, fennel is an extremely aromatic plant with many uses - the most intriguing and flavorful being fennel pollen as a spice.

What is fennel pollen served with?
Nearly everything, even apricot desserts! Use as a dry rub on meats before roasting, sautéing or grilling. Sprinkle on top of fish and drizzle with olive oil. Substitute fennel pollen for saffron in rice, pasta or risotto dishes. I love it on salmon, potatoes, steamed vegetables, pork, chicken, seafood, red sauces, white sauces... try it!

Medicinal Uses*
A tea made with a few teaspoons of fennel pollen is said to relieve indigestion. Fennel is used as an effective treatment for respiratory congestion and is a common ingredient in cough remedies. A tea made from fennel helps to stimulate the flow of breast milk. Why is fennel pollen thirty or more cents per gram?
Fennel flowers are hand picked and laid out to dry. They are then screened many times to remove the stems and gather the pollen. It is kept frozen to assure freshness. Flowers are picked at the peak of their bloom so the best pollen is obtained.
